EXTRA-VIRGIN OLIVE OIL
The olive trees are at an average altitude of 550 on the seal level and the particular microclimate of the area allows for a very low level of parasitic attacks.
This condition, combined with a soil particularly suitable for growing alive trees, allows an environmentally friendly agriculture respectful of the local flora and fauna, as well as of the pre-existing pedological characteristics.
The planted cultivar are Frantoio, Leccino, Moraiolo, Pendolino, Dolce Agogia, Nostrale of Rigali for a total of 6,000 olive trees, 40% of which are fully productive. The cultivation technique entails a controlled turfing which, besides protecting the territory from hydrogeological damage, provides the plants with a considerable quantity of organic substances improving the fertility of the soil. In addition to this, the soil is also fertilised with manure and organic fertilisers.
We do not use any pesticidal and pathogens are fought with physical, agronomic, and organic means. This enables the endemic preservation of the harmful agents. Olives are collected manually (grazing) and the olives are stored for a maximum of 8 hours before the pressing. The grinding takes place by dripping (“sinolea”).
The cold-pressing system guarantees the monitoring of the temperatures in any phase of the processing of the single batches. The obtained product is immediately filtered and stored in stainless steel casks.
The last phase is the packaging which always takes place in the farm thanks to special bottling-machine in full observance of the regulations in force.
The processing of olives coming from different cultivars, the use of the most state-of-the-art technologies, the favourable pedoclimatic conditions and the particular care, as well as the hygiene, guarantee an extra-virgin olive oil with a fruity aroma, a unique flavour, and with a pleasantly spicy and bitter aftertaste.

HONEY
Honey has represented for thousands of years the only sweetening agent, considered its antibacterial function and its high energy-giving values. Still today bees feed on flowers in the uncontaminated Umbria countryside, providing a product of excellent quality. Our farm offers different varieties, such as acacia, flowers, heather, oak, and chestnut honey.

PRESERVES
Cherries, peaches, plums, apricots, loquats, melons, hazelnuts, and figs. A basket full of delicacies that we turn into excellent preserves.

LEGUMES
Chickpeas, broad beans, lentils, beans. These are very important for the economy of our area and they have been recently rediscovered after a period of progressive decrease in cultivation and consumption. These staples have been widely rediscovered thanks their nutritional properties within the Mediterranean diet.

DRIED FRUIT
Chestnuts, hazelnuts, walnuts, both fresh and roasted, to be tasted on their own or to garnish your favourite desserts.

SPICES
